Eustace — English form of Eustachius or Eustathius, two names of Greek origin which have been conflated in the post-classical period. Saint Eustace, whose is known under both spellings, was a 2nd-century Roman general who became a Christian after seeing a vision of a cross between the antlers of a stag he was hunting.
